For high sugar musts, it is essential to select a yeast that is capable of completing fermentation. Viniflora® Merit™ is a selected strain of Saccharomyces cerevisae isolated from a Syrah wine in South Africa. Merit™ is a very fast, reliable and robust yeast strain that can ferment wine up to 17% alcohol (v/v). This strain is ideal for restarting fermentations and produces very low levels of SO2.
